Already today I have had a morning where things didn't go to plan, but actually I think I'm ok with that.
I planned to get up super early (easy), send a few emails (easy), and then make some sugar glass (not so easy).
All my ingredients were weighed and ready; I put them in the pan and started to watch the level on my thermometer climb. After about 15 minutes I was a little bored and wishing I'd made a coffee. I took my eye off the pan for about 30 seconds tops. 29 seconds too long it seems. Suddenly my sugar mix was at 165 degrees (I was aiming for 150) - in the world of sugar this is pretty much armageddon for a project.
I knew I couldn't save the sugar. It was continuing to darken and the stickiness of it was becoming more and more like superglue in front of my eyes, so I decided I had two options - bin it, or use it for something else.
I grabbed a handful of nuts, seeds and dried fruit from my homemade trail mix tub, and threw it in the pan. Ta-Dah! I had fruit and nut brittle!
So there you have it, if things go wrong in any way this week simply salvage what you can, learn from it and move on.
Not only will you have educated yourself, but you may even get something nice out of a remarkably sticky situation!
